MMMMM----- Recipe via Meal-Master (tm) v8.05
 
      Title: Stewed Celery with Herbs
 Categories: 
      Yield: 6 Servings
 
      3 c  Coarsely chopped celery
    1/4 c  Finely chopped fresh parsley
           .. leaves
      3 tb Butter
      2 tb Flour
      1 c  Milk
      3 oz Cream cheese; cut into
           .. pieces
      1 tb Chopped fresh basil
           -=OR=-
      1 ts Dried basil
      1 tb Chopped fresh chives
           -=OR=-
      1 ts Dried chives
    1/4 ts Salt
 
  1. In medium sized skillet, heat celery, parsley
  and one inch water to boiling over high heat.
  Reduce heat to low, cover and cook until celery is
  tender, about 10 minutes. Uncover and continue to
  cook, stirring constantly, until all liquid
  evaporates, 15 to 20 minutes. Transfer celery
  mixture to a bowl.
  
  2. In same skillet, melt butter over medium heat.
  Stir in flour until smooth. Gradually stir in milk
  and cook, stirring constantly, until sauce
  thickens. Stir in cream cheese, basil, chives and
  salt until cheese melts. Return celery to sauce;
  heat mixture just to boiling and serve
  immediately.
