Title: Lima Bean Soup

Yield: 6 Servings
4 1/2 c Chicken stock
3 c Frozen lima beans; thawed
3 Celery stalks with leaves;
.. chopped
1 md Tomato; diced
1 Leek; white part only,
.. chopped
2 Cloves garlic; chopped
1 md Bay leaf
1/2 ts Dried leaf sage
1/2 ts Dried leaf basil
1 tb Dry sherry; optional
2 tb Soy sauce
1 tb Italian parsley; chopped
Combine all ingedients except parsley in a large
saucepan and bring to a boil. Reduce heat and
simmer until vegetables are tender. Puree 3/4 of
the mixture. Return to saucepan and simmer 5
minutes more. Add parsley just before serving.
Makes 6 servings.
Variations:
To please children, puree entire recipe--they will
love it. Add cubed chicken or turkey for a one pot
dinner. Add 1 tablespoon salsa or hot pepper
sauce.
