MMMMM----- Recipe via Meal-Master (tm) v8.05
 
      Title: Haddock with Spinach
 Categories: 
      Yield: 4 Servings
 
      1 lb Haddock fillets
  1 1/2 c  Milk
    1/2 c  Water
      1 sm Onion
    1/2    Bay leaf
      3    Peppercorns
    1/4 c  Butter
      3 tb Flour
           Salt and pepper to taste
      1 tb Mustard
      2    Hard boiled eggs; sliced
  1 1/2 lb Fresh spinach
    1/4 ts Grated nutmeg
           Grated Parmesan to taste
 
  Combine fish, 1/2 cup milk, water, onion, bay
  leaf, and peppercorns in large saucepan; bring to
  a boil, reduce heat and simmer until fish tests
  done with fork. remove fish from pan; flake
  finely. Strain pan juices and reserve.
  
  Preheat oven to 425°.
  
  Melt butter in saucepan; stir in flour. Add 1 cup
  strained cooking liquid, and 1 cup milk. Season
  with salt, pepper and mustard; add sliced eggs and
  flaked fish. Simmer until heated through. Wash
  spinach, do not dry. Cook, using no additional
  water, until wilted. Chop; seasoning with salt,
  pepper and nutmeg. Place spinach in greased
  casserole dish. Cover with cheese and sauce mix.
  Sprinkle with grated cheese; bake 15 minutes.
  Remove from oven; serve hot.
