Title: Chicken Vegetable Stirfry with Cashews

1 lb Boneless skinless chicken
.. breasts; cut in 1" chunk
1 tb Cornstarch

1/3 c Reduced sodium soy sauce
1 c Orange juice
1 c Water
1 tb Cornstarch
1 ts Dark Oriental sesame oil

2 ts Vegetable oil
1 lg Red bell pepper; cut in thin
.. strips
2 c Frozen broccoli cuts
1 cn (7 1/2 oz) baby corn; cut in
.. half if large
1 ts Minced garlic
1/4 c Coarsley chopped cashew nuts
1. Combine chicken and cornstarch in bag and shake
until chicken is well coated.
2. Blend sauce ingredients; set aside.
3. Stir fry chicken in oil until cooked through.
Transfer to serving platter.
4. Stir fry peppers 1 minute; add broccoli, corn &
garlic. Stir in sauce, heat to boiling and cook
until vegetables are crisp tender and sauce is
slightly thickened, about 2 minutes. Return
chicken to skillet and heat through. Sprinkle with
cashews before serving.
