      Title: Vegetable Pancakes

      Yield: 4 Servings
 
    1/2 md Onion; finely chopped
      2 md Potatoes; peeled & shredded
      3    Carrots; shredded
      2 c  Packed spinach; sliced
    1/4    Head lettuce; finely sliced
      2    Eggs; lightly beaten
      1 c  Flour
      1 ts Baking powder
      1 ts Salt
    1/8 ts Pepper
 
  Combine vegetables; mix eggs in well. Stir dry
  ingredients together; add to vegetables. Fry in
  well oiled skillet, using 1/4 cupful for each
  pancake and spreading into a 4" circle. Brown on
  both sides.
  
  Makes 4 to 6 servings.
