Title: Trout with Almonds

Yield: 6 Servings
6 Brook trout; cleaned
2 tb Oil
1/4 c Butter
1/2 c Slivered almonds
6 sl Bacon
2 Lemons; cut into wedges
Preheat coals in outdoor grill. Rub trout with
oil. Place on grill rack and cook 15 minutes,
turning once. Meanwhile, melt butter in fry pan.
Add almonds and sauté until golden brown. Remove
from pan. Add bacon to grill about 5 minutes
before fish is done; cook until crisp. To serve;
place fish on serving platter. Cover each fish
with slice of bacon. Pour butter and almond
mixture over trout; garnish with lemon wedges.
