Title: Swordfish Steamed with Herbs

2 1/2 lb Swordfish, 3/4" thick; cut
.. in 2 pieces
Coarse salt
Pepper to taste
2 tb Extra virgin olive oil
2 tb Lemon juice
2 tb Chopped fresh basil

1 ts Dried basil
2 tb Chopped parsley
1/4 ts Oregano
Place fish in a single layer on heavy round
porcelain plate or platter. Sprinkle with salt and
pepper; brush olive oil over fish. Sprinkle lemon
juice, basil, parsley, and oregano over fish.
Place one piece of fish on top of the other. Cover
fish with another heavy round pocelain plate or
platter; set on rack in large pot over boiling
water (water should be up to level of rack) Steam
fish until it turns white. Place fish on platter;
serve hot or cold.
