Title: Sponge Cake

6 Eggs; separated
1 1/2 c Sugar
1/2 c Water
1/4 ts Salt
1 c Flour
3/4 ts Cream of tartar
Beat egg whites with rotary beater until stiff.
Put sugar and water in saucepan and boil until it
threads. Then beat into egg whites until cold.
Beat yolks good, until light and foamy. Beat cold
whites into yolks. Mix together the flour, salt
and cream of tartar. Fold carefully into egg
mixture by hand and put into tins. Bake in a 275
degree oven until nearly done, and then 5 minutes
at 325 degrees. This is kind of complicated, but
the results are good.
