Title: Sole Fillets with Zucchini

Yield: 4 Servings
4 Sole fillets (6 oz)
Salt and pepper to taste
1 c Flour
2 tb Vegetable oil
3 tb Butter
1/2 lb Mushrooms; sliced
1 sm Zucchini; thinly sliced
1 tb Capers
1 tb Chopped parsley
1/2 Lemon; juiced
Sprinkle fish fillets with salt and pepper; coat
with flour. Heat oil and 2 tb butter in large fry
pan. Add fish fillets and cook for 3 minutes. Turn
and cook 3 minutes more. Transfer fish to serving
platter; keep warm. Add mushrooms, turn heat to
high. Add zucchini and cook for 5 minutes, shaking
pan frequently. Add capers and chopped parsley;
stir to mix well. Add remaining butter to pan;
cook, stirring, 2-3 minutes. Stir in lemon juice.
Pour mixture over fish and serve.
