MMMMM----- Recipe via Meal-Master (tm) v8.05
 
      Title: Oxtail Soup
 Categories: 
      Yield: 1 Servings
 
      3 tb Drippings
      2    Oxtails
      1 lg Onion; diced
      1    Carrot; diced
      2 qt Cold water
      2    Stalks celery
      2    Sprigs parsley
      1    Bay leaf
      2 tb Pearl barley
      1 tb Flour
           -=IN=-
      2 tb Water
           Salt and pepper
 
  Melt fat; fry oxtails (or beef tails), onion and
  carrot until brown; add water or stock. Tie the
  celery, parsley and bay leaf together; add to
  soup. Bring to a boil, add barley and simmer 4
  hours. Remove large bones and bouquet garni;
  thicken soup with flour paste. Season rather
  highly and serve.
