MMMMM----- Recipe via Meal-Master (tm) v8.05
 
      Title: Orange Yeast Bread
 Categories: 
      Yield: 1 9" loaf
 
MMMMM---------------------------BREAD-----------------
    1/3 c  Golden raisins
      3 tb Orange liqueur
    1/4 c  Butter
    1/2 c  Milk
    1/4 c  Sugar
    1/2 ts Salt
      1 pk Yeast
    1/2 ts Sugar
    1/4 c  Warm water
      1    Egg
      1    Egg yolk
      3 c  Flour; to 4
      1 ts Cinnamon
    1/2 ts Nutmeg
    1/4 ts Cloves
    1/4 ts Allspice
    1/3 c  Diced orange slice candies
    1/3 c  Chopped almonds; toasted
    1/3 c  Pine nuts
      1 tb Grated orange peel

MMMMM---------------------------GLAZE-----------------
    1/4 c  Light corn syrup
    1/4 c  Orange juice
      1 tb Water
    1/4 ts Cinnamon
      1 tb Butter
 
  1. Soak raisins in liqueur 30 minutes.
  
  2. Melt butter in milk; add 1/4 cup sugar and
  salt. Let cool slightly.
  
  3. Proof yeast in bread bowl 5 minutes. Add milk
  mixture. Beat in egg and egg yolk.
  
  4. Sift 3 cups flour and the spices; add 2 cups to
  the yeast mixture, blending until smooth.
  
  5. Toss candies, nuts and orange peel with 1
  tablespoon flour; stir into dough with raisins and
  liqueur. Add enough flour to make a soft dough.
  Knead until smooth; adding flour as needed. Place
  in buttered bowl, turn to grease top, cover and
  let rise until doubled, about 2 hours.
  
  6. Combine and simmer all glaze ingredients,
  except butter, 5 minutes. Stir in butter until
  melted; set aside to cool.
  
  7. Punch down dough; knead 5 minutes, cover and
  set aside to rest 10 minutes.
  
  8. Line a baking sheet with brown paper. Form
  dough into a round, 2" thick, place on sheet.
  Brush with glaze; cover and let rise 45 minutes.
  
  9. Preheat oven to 350°.
  
  10. Brush loaf with glaze; bake 40 to 50 minutes
  or until bread sounds hollow when tapped. Cool on
  wire rack.
