Title: Creamy Tomato Bisque

2 c X2 chicken stock*
1 pt Tomatoes; cut up
1/2 c Chopped celery
2 tb Chopped onion
2 md Tomatoes; peeled & diced
1/4 c Butter
3 tb Flour
2 c Light cream
1/3 c To 1/2 sherry; optional
*Double strength.
Bring stock, celery and onion to a boil. Reduce
heat, cover, and simmer until vegetables are
tender, about 20 minutes. Puree mixture; set
aside. Add fresh tomatoes and butter to pan; sauté
5 minutes. Stir in flour until smooth. Add cream
and cook over low heat until thickened. Stir in
vegetable puree and sherry, if desired.
