MMMMM----- Recipe via Meal-Master (tm) v8.05
 
      Title: Crab Mushroom Casserole
 Categories: 
      Yield: 8 Servings
 
    1/4 c  Butter
    1/4 c  Flour
      2 tb Finely chopped parsley
      2 tb Finely chopped onion
    1/4 c  Finely chopped celery
    1/4 c  Finely chopped bell pepper
      1 lb Mushrooms; sliced
  1 1/2 c  Chicken stock
      2    Egg yolks; slightly beaten
    3/4 ts Salt
      1 lb Crab meat
    1/4 c  Sherry
    1/4 c  Sharp cheese; grated
           Buttered bread crumbs
 
  Preheat oven to 350°.
  
  Melt butter; stir in flour, parsley, onion, celery
  and bell pepper. Cook until golden; add mushrooms
  and cook an additional 10 minutes. Stir in stock
  and cook until thickened. Remove from heat; stir
  into egg yolks slowly. Mix in salt, crab and
  sherry. Transfer to baking dish top with cheese
  and crumbs. Bake until top is browned and
  casserole is bubbly, about 45 minutes.
  
  To make ahead and freeze, leave cheese and crumbs
  off until ready to bake.
  
  To serve in pastry shells, do not use topping.
  
  Makes 8-10 servings.
