2 Stalks celery; finely
.. chopped
1 Leek; finely chopped
1 Onion; diced
2 tb Butter
1/2 lb Perch fillets; chopped
1 qt Water
1/2 lb Crabmeat
1/2 c Dry white wine
1 ts Salt
1/2 ts White pepper
1 ts Curry powder
1 ts Fines herbes
1/2 c Chopped parsley
sauté celery, leek, and onion in butter for 3
minutes. Add fish and water to pot; simmer 15
minutes. Remove fish pieces with slotted spoon.
Strain broth. Return fish and stock to pan. Add
crabmeat to pot. Stir in wine, salt, pepper, curry
powder, and fines herbes; bring to a boil, then
remove from heat. Serve sprinkled with parsley.
