3 lb Fat pork
3 tb Salt
2 tb Black pepper
1/4 ts Red pepper
4 tb Sage; sifted
Put the pork through the meat grinder, add the
seasonings and mix thoroughly. Grind again so the
meat may be nice and fine. Savory, mace, cloves
and nutmeg may be added if you like.
