1 1/2 Dozen clams
2 sl Bacon; diced
1 Onion; sliced
1 c Water
3 lg Potatoes; diced
1 qt Milk
2 tb Butter
2 tb Flour
Salt & pepper
8 Crackers
1 tb Parsley
Drain clams and chop fine; save liquid. Fry out
the bacon, fry onion in fat. Add clam liquid,
water and potatoes. Cook until tender; season, and
add the clams and milk. Cook 10 minutes more, then
thicken with butter and flour creamed together.
Pour chowder over the crackers and sprinkle with
parsley. This tastes really good, especially on a
cold winter night.
