5 lb Chitterlings
1 tb Salt (up to 2)
1/4 ts Cayenne
2 Eggs; slightly beaten
2 tb Flour
1 sm Can evaporated milk
Cover chitterlings with water; mix in salt & red
pepper. Cook, covered, over medium heat until fork
tender, about an hour. Drain well.
Mix eggs, flour and milk to make batter. Dip
chitterlings in batter; fry in hot oil until
browned, turning once. Serve hot.
Makes 8-10 servings.
