Title: Chicken Breasts with Brandy

2 lg Boneless skinless chicken
.. breasts*
1/4 c Olive oil
2 tb Butter
1/2 c Dry white wine
3 Cloves garlic; minced
Salt and pepper to taste
3 tb Finely chopped fresh
Parsley
1/4 c Brandy
*Pounded and dusted lightly with flour.
Sauté chicken slowly in oil and butter. When
browned, add wine, garlic, salt and pepper to
taste. Cook slowly for about 15 minutes. Add
parsley.
Before serving, heat brandy, pour over chicken and
ignite.
Makes 4 servings.
