MMMMM----- Recipe via Meal-Master (tm) v8.05
 
      Title: Carrot Cake Pudding
 Categories: 
      Yield: 8 Servings
 
    1/2 c  Butter; softened
  1 1/4 c  Brown sugar
      2    Eggs; beaten
    1/2 ts Baking soda
           . -=DISSOLVED IN=-
      1 tb Hot water
      1 c  Grated carrots
      1 c  Raisins
    1/2 c  Currants
      1 tb Finely chopped candied lemon
           . peel*
      1 tb Finely chopped candied
           . orange peel*
  1 3/4 c  Flour
      2 ts Baking powder
    1/2 ts Salt
    1/2 ts Cinnamon
    1/2 ts Nutmeg
    1/4 ts Allspice
      1 c  Chopped nuts
           Whipped cream; for topping
 
  *Separate Recipes.
  
  1. Preheat oven to 350°. Grease mold.
  
  2. Cream butter and sugar. Add eggs and dissolved
  baking soda. Stir in all remaining ingredients
  except whipped cream until well combined. Bake for
  1 hour. Serve hot or cold, topped with whipped
  cream.
