Title: Beef Tomato Stir Fry

1/2 lb Flank or round steak;
.. sliced diagonally into
.. very thin strips
1 1/2 ts Minced fresh gingerroot
1 Clove garlic; minced
4 ts Cornstarch; divided
1 ts Soy sauce
1 Egg white
1 tb Oil
1 md Green pepper; cut in strips
1 md Onion; cut in strips
1 Rib celery; sliced
1/2 c Water

2 tb Water; divided
1/4 c Ketchip
3 tb Sugar
4 md Tomatoes*
3 c Cooked rice
* Peeled, seeded and cut into wedges.
Mix gingerroot, 1 teaspoon cornstarch, soy sauce
and egg white. Toss with meat; set aside 5
minutes. Stir-fry in hot oil just until meat is no
longer red. Remove; set aside. Pour in green
pepper, onion, celery and the 1/2 cup water; cook,
covered, 3 minutes. Stir in ketchup and sugar;
recover and cook another 2 minutes.
Combine remaining cornstarch and water; stir into
beef. Return meat to skillet; cook until slightly
thickened. Add tomatoes; heat through. Serve over
cooked rice.
