2 tb Oil
1 lg Onion; chopped
2 Cloves garlic; chopped
1 ts Fresh ginger; grated
1 lb Chicken livers; cut in bite
.. sized pieces
1 tb Flour
2 tb Roasted peanuts; ground
1 lg Tomato; peeled & chopped
3/4 ts Basil
1 c Chicken stock or water
1 ts Ground coriander
1 ts Salt
1 ts Fresh chili; chopped
Black pepper
8 oz Spaghettini; cooked
2 Hard boiled eggs; quartered
1. Sauté onion, garlic & ginger until lightly
browned. Add liver & cook 2 minutes. Sprinkle with
flour, cook until slightly browned. Stir in
peanuts and cook another 2 minutes.
2. Add tomato & basil; sauté 2 minutes. Stir in
stock, coriander, salt, chili & pepper. Simmer,
covered, 5 minutes.
3. Arrange pasta on heated platter & top with
liver mixture. Garnish with eggs and serve.
